Okay, this cake is Amazing! It's a chocolate cake with cream cheese frosting in the middle and chocolate buttercream frosting on top. The best part about it is that it's so easy! It's sooo moist and rich and so so worth making it.
So lets get started
Preheat oven to 325 degrees
Preheat oven to 325 degrees
Mix all ingredients together. Pour batter into 2, 9 inch rounds. Put in oven and bake for about 25-30 mins or until done. If it is a little under done it will finish baking as it cools.
Next, we make the frosting
Beat the cream cheese and butter with an electric mixer at medium speed for about one minute. Add the vanilla and beat one minute more. Reduce the mixing speed to low, and add the powdered sugar about 1/2 cup at a time. Once the sugar is completely incorporated, beat at medium speed for about two minutes or until fluffy.
Now we make the Chocolate Buttercream Frosting
In a large bowl, combine the powdered sugar and cocoa powder. Beat the butter with an electric mixer at medium speed for about one minute. Reduce the mixing speed to low, and add the sugar/cocoa mixture about 1/2 cup at a time. Halfway through this process, add the milk and vanilla. Once all of the ingredients are thoroughly incorporated, beat at medium speed for about two minutes or until fluffy.
Now Layer
Place the first 9in round on cake stand. If you need to cut off the top to level it, do so. Then place the cream cheese frosting on top, leaving about an inch or so on the edges. (There will be a lot of frosting.) Dont use all the frosting, keep about 1/2 cup out. Then place the 2nd 9in round on top, squish it down just a little. Now fill in the gaps around the edges if there are any with the extra frosting.
Okay, so once that is done. We will start with the chocolate buttercream frosting. Yumm. First do a light layer of the frosting all over the cake. This is called a crumb coating. Place in the fridge for about an 1/2 hour.
Pull back out and begin to frost! With a frosting knife I like to make a curving motion to make the cake have some texture. Wipe any excess frosting off the may have fallen onto your cake stand. When your done sprinkle some chocolate chips on top.
YOUR DONE!!
We hope you enjoy and try not to eat the whole thing all in one sitting! But if you cant help it then that's okay ;)
Sincerely,
Jean
